The cost shows a dash

A line is missing a weight or a price. Open the recipe and tap the line marked Needs attention. Add a weight per cup or per each for that ingredient, or enter the amount in grams.

How do I restore Pro?

Open Settings, then Restore purchase, on a device signed in to the Apple Account that bought it.

How do I move to a new iPhone?

With Pro, turn on iCloud sync. On any version, use Settings, Back up to Files, then Restore from a backup on the new device.

Can I change currency or units?

Yes. Settings has currency, US or metric units, and price rounding.
